Kaya Toast and Soft – boiled Eggs
The one and only traditional Singaporean breakfast — Kaya toast with soft– boiled eggs. This traditional bread is a white loaf, toasted with a bread grill, lathered with kaya then slapped with a thick slice of butter to slowly melt within 2 slices of warm bread. This is the classic kaya toast. These days, Kaya Toast is considered as not only a national breakfast dish but also a popular snack that delights tea breaks of office workers and recharges tired shoppers after a long shopping tour.
Similar to the soft boiled eggs but the Singaporean version has a much runnier, curd-like white. They are cooked in the residing heat from freshly boiled water and never simmered. This allows you to have complete control over the temperature and timing to achieve that desirable just-set egg white with the coddled yolk waiting to ooze out. For best results, the choice of eggs are crucial. Use the freshest eggs you can get your hands on. To serve, a dash of soy sauce and a pinch of ground.
To every Singaporean, the ubiquitous half-boiled egg is eggy perfection. This humble breakfast dish is widely available in all Kopitiams (coffee shops) around the country and is often accompanied by a cup of Kopi-O (black coffee) and some kaya toast to dunk.
