NOX -Dine in the Dark

NOX -Dine in the Dark

NOX -Dine in the Dark entered the Singapore restaurant scene on the 2nd of August 2013. The concept from Europe and the US finally opened its doors at Beach Road Singapore. A reservation-only restaurant, NOX challenges you to a multi-sensory journey of heightened taste, touch, smell and sound when you dine in complete darkness. You will find yourselves expertly guided by specially trained blind and visually impaired servers, resulting in a truly rich human experience where roles are reversed and the blind now become your eyes.

When you read and dine in the dark, you may think that you will still be able to see a little. That is not the case here because it is literally pitch black while you are eating, and what an experience it will be! Not only is the dining area is in total darkness, the servers are also visually impaired but expertly trained to guide and present dishes as per any normal restaurant. It may seem gimmicky but a meal here is plain good fun — it will put your senses to a test. There is something rather transgressive about the cover of darkness.

Most importantly, it is the take home message to take care of your eyes. Through my dinner in the dark, I could hear much better. I could hear what other tables are talking. And my taste palate become more sensitive. We often take advantage of our eyes and never really the “taste” in our food. But this has definitely taught me to appreciate our food and ingredients.

Eng Ho Fried Hokkien Prawn Mee

Eng Ho Fried Hokkien Prawn Mee

It is really hard to find good hokkien mee nowadays, Eng Ho hits the spot by using thin nice noddle in their Hokkein prawn noodle which absorbs all the sweet goodness in their soup. There was no sight of fried pork lard in this plate of hokkien mee, but their broth was already flavourful enough. Using wild sea prawn, squid and pork to cook the rich stock, it is such a rare find because many hawkers would just go for tiger prawns. Wild sea prawns gives a sweeter taste and more delicate flesh. The noodles soak up the essence from the gravy, keeping it very moist and has a “wet look”.

Available from $3 to $5, The prawns were juicy and succulent, the sotong was cooked perfectly and there was a piece of thinly sliced pork belly to go with the noodles. Belachan chilli was totally out of way because the dish itself doesn’t even need such a spicy complement. If you have been a fan of wetter hokkien mee, this will suit your palate.
